Ingredients

3 leaves basil chopped
juice of 1 lemon
1 chopped portabella mushroom
1 chopped shallot
2 oz smoked salmon
1 tbsp butter or butter substitue
1 tbsp olive oil
buckwheat pasta
dash of white wine
Directions
Cook pasta in salted water until al dente.
heat half of olive oil in pan. Add mushrooms, saute until heated through and start to slightly shrink. Add shallots, salmon, butter, lemon juice and a splash of white wine. Saute until butter is melted. Add pasta to rest of mix and combine. Add the chopped basil and the remaining olive oil. If you'd like you can add a bit of the pasta water as well just to help mix it all together and get the sauce to stick to the noodles. Serve immidiately.
