Ingredients

    Pineapple, fresh, 2 cup, diced
    Beans, black, 2 cans drained and rinsed
    *Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2" diced
    Onions, raw, 1 cup, chopped
    fresh Cilantro, raw, 4 tbsp or 1/4 cup chopped
    *Tomatoes, red, ripe, canned, with green chilies, 2 cans (
    Jalapeno Peppers, 4 , seeded and diced
    Pepper, red 4 tbsp or to taste
    Orange Juice, 1 cup
    ground cumin seed 4 tbsp

Tips

this is best once it has marinated over night and served cold..salt and pepper is to taste. I don't add any and I serve it with unsalted blue corn chips.


Directions

In a large bowl combine all ingrediants , makeing sure that all are diced well..when adding tomatoes add juice and all to mixture,add orange juice, and salt and pepper to taste..place in sealed container..and let marinate in refrigerator over night..best served cold
