Ingredients

    1 t butter
    12 oz. of salmon fillet
    fresh ground pepper to taste
    1/3 cup of light canola mayonnaise
    1 chipotle pepper in adobe sauce, drained of sauce
    2 T chopped cilantro

Tips

Great served with steamed asparagus or steamed broccoli, drizzled with lemon juice and sprinkled with Salad Supreme.


Directions

Preheat oven to 350 degrees. Melt the butter in a square baking pan in the preheating oven. Rinse the salmon fillets and pat dry. Drag the fillets through the butter on both sides and make sure the butter coats the bottom of the pan. Sprinkle the fillets with fresh ground pepper on both sides. Puree the remaining ingredients together and coat both sides of the salmon fillets with the resulting sauce. Cover with aluminum foil and bake at 350 degrees for 25 minutes.
