Ingredients

    1/2 cup oats
    1/2 tsp vanilla extract
    1 tsp pumpkin pie spice
    1 tsp splenda
    1 tsp sugar
    1/4 cup no salt added canned pumpkin
    1/4 cup unsweetened vanilla almond milk
    1 tsp splenda brown sugar mix
    1 Tbsp pecans, chopped
    pinch of salt

Directions

1. Preheat oven to 375 degrees.

2. In a medium sized bowl, combine oats, pumpkin pie spice, vanilla, Splenda, sugar, pumpkin, pecans, and milk. Pour into a ramekin that has been lightly sprayed with cooking spray.

3. Bake for 20 minutes.

4. Remove from oven and sprinkle with brown sugar. Return to oven under broil for 3 minutes or until brown sugar bubbles.

    Incredible!
    Very good! I tripled this and made in a small cast iron skillet and divided into three portions. I did toast my pecans first before adding to the mixture and sprinkled 1 tsp of mini choc chips on top after baking (per serving). This was very good! - 10/9/20
