    *Green Cabbage, raw (1 head, medium) shredded
    *Carrot - raw, 1/2 cup shredded
    Scallions, raw, 3/4 cup, minced
    *Dried Cherries, 1.5 cup
    Apple, Gala (medium), cored and sliced thin
    Orange Juice, 1 cup
    *shallots, 0.25 cup minced
    *Oil (Wesson) Canola oil, 6 tbsp
    *Diamond Crystal - Kosher Salt, 1.0 tsp


Make a day ahead of time.


Place cabbage, carrot, scallions, cherries and apple in an extra large bowl. Whisk orange juice, shallot, oil and salt in a small bowl. Pour over salad and toss thoroughly.

Serving Size: Makes 32 half cup servings.
