Introduction
made with Splenda and Whole wheat flour made with Splenda and Whole wheat flourNumber of Servings: 34
Ingredients

2 cups flour
1 tbsp baking powder
1.5 tsp salt
2 tbsp shortening
1/3c splenda
1 egg
1 tsp vanilla
1 cup milk
1.5 c fresh blueberries
Tips
toss blueberries in 1/4 c of the flour before adding to keep them from sinking to the bottom of muffins
Directions
mix dry ingredients. Mix egg, shortening, vanilla, and milk in another bowl. add dry ingredients and mix just until moistened (add up to 1/3 c milk if too dry) Over mixing will cause dense muffins. Fold blueberries gently into mix. drop by teaspoonful into greased mini muffin tin. Bake at 375 degrees for 8-10 min.
