Introduction

Ingredients

    Unsweetened apple sauce - 1 cup
    Steevia - to taste
    Eggs - 2
    Mashed bananas (3 medium) - 1 cup

    Whole wheat flour - 1 cup
    Wheat germ - 1/2 cup
    steel cut oats - 1/2 cup
    baking soda - 1 tsp
    baking powder - 1/2 tsp.
    Salt - 1/2 tsp
    Chopped Walnuts - 1 cup
    Chocolate Chips - .5 cup

Tips

(Note you can substitute 1 cup of any type of grain- quinio flakes, ground flax etc in place of the wheat germ and oats, but this is what I usually have in the house) I sometime use peanut butter or white chocolate chips, and sometimes all three.


Directions

Mix wet ingredients, beating eggs then adding mashed bananas. In separate bowl, combine dry ingredient. Add wet mixture to dry, mixing only to moisten. Transfer to greased mini loaf pan (or 9x5x3 loaf pan) and bake at 350 degrees F (180C) for 30 minutes and then check readiness with a toothpick. If the toothpick comes out clean,they are done. Full loaf needs to cook for about 1 hour. Remove frompan and palce on rack to cool.

Serving Size: makes 13 mini loaves in a mini loaf pan
