Introduction

Made this up after reading several egg recipes. Made this up after reading several egg recipes.
Number of Servings: 3

Ingredients

    6 lg eggs
    thin sliced deli ham (I used 2 pieces to line muffin tins)
    2 tbs grated parmigian cheese
    2 tbs diced scallion greens
    Cooking spray
    Salt & pepper to taste

Tips

I served with one piece of toast...a fresh fruit cup would be great with these.


Directions

Preheat oven to 350 degrees
Spray muffin tins with cooking spray
Line 6 muffin tins with 1-2 slices of ham
Crack one egg into each ham lined muffin tin
Sprinkle eggs with cheese and scallion greens
Place in preheated oven and bake 15-20 minutes depending on how you like your yokes done.
Serve immediately. Salt and pepper to taste.
