Ingredients

    marinade
    2 cloves garlic
    1 1/2 tbsp fresh ginger, roughly chopped
    1 tbsp olive oil
    1 cup chopped mango
    1/4 cup agave
    2 tbsp red wine vinegar
    juice of 1/2 lemon
    1/2 cup orange juice
    juice of two limes
    1 cup orange juice
    1/4 tsp salt
    1/4 tsp pepper

    mango sauce
    1 tbsp apple cider vinegar
    juice of 1/2 lemon
    1 tsp brown sugar
    1 clove garlic
    1 tsp soy sauce

    stir fry
    1 14-oz pack of firm tofu
    1 medium mango
    snap peas
    1 red bell pepper
    1/2 head of broccoli
    1/4 of a white onion

    +serve with brown rice.

Directions

press tofu for at least 30 minutes and cut into blocks. dry fry in a sauté pan on medium heat. combine all marinade ingredients into bowl, add tofu and cover with water. let tofu marinate for another 30 minutes. chop vegetables and mango and set aside. combine mango sauce ingredients into food processor and blend, adding soy sauce to taste and water for texture.

heat sauté pan on medium and add mango sauce. stir in vegetables. drain tofu from marinade and add to pan, stirring in the rest of mango sauce.

serve over brown rice.

Serving Size: makes 4 fair-sized portions
