Ingredients

4 fresh beets with tops
1 medium sized cucumber
2 green onions
fresh dill
plain kefir
Tips
Use a food processor to grate the beets and cucumber, it makes things much quicker.
This soup tastes best the next day after it has had some time in the fridge to meld.
Directions
- Peel and grate the beets. Chop the stems into 1/4" pieces. Save the greens for something else, they're tasty.
- Put the beets and stems in a pan with just enough water to cover, add salt and simmer about 15 minutes until beets are tender.
- Let beets cool, do not drain.
- Grate the cucumber.
- Chop green onions into 1/4" pieces.
- Chop the fresh dill.
- Add cucumber, green onions, and dill to cooled beets.
- Add enough kefir to turn the soup a bright hot pink (about 2 cups)
Serving Size: Makes 6 2-cup-ish servings
