Ingredients

    1 Cup of Brown Rice
    1 Tomato/ Handful of cherry tomatoes chopped
    1/2 Avocado- sliced
    1/2 Lemon - Juiced
    1 tbsp Olive/ Canola Oil
    1/2 Large Cucumber - cubed
    Feta Cheese - optional
    chopped parsley - optional
    Pine nuts - optional
    black pepper- pinch



Tips

For lunch you may want to add in a piece of grilled chicken breast. This is my new favourite salad especially for lunch at work! Its so quick and easy and very cheap to make! Who knew it could be so delicious!


Directions

1. Boil rice with 2 cups of water (Brown rice tends to need more water than white grains)
2. chop up ingredients
3. wait for rice to cool and stir in ingredients
4. add dressing
5. stir and serve



Serving Size: Makes 2 servings for lunch or 3 sides
