Ingredients

2 tsp olive oil
1/2 cup onion, chopped
1/2 cup green onions, chopped
1-2 cloves of garlic
1/2 cup 99% fat free chicken broth
2 cups chopped tomatoes
1/2 lb. of smoked turkey sausage
salt and pepper to taste
fresh parsley to garnish
Tips
One can of stewed tomatoes works well instead of fresh. Just make sure they're whole, and chop them yourself.
Directions
Heat the oil and saute both kinds of onions for 2-3 minutes, stirring, until softened a bit. Add everything else except the parsley and bring to a boil, then reduce the heat, cover and simmer for 15 minutes. Just before serving, take the lid off and boil a few minutes to evaporate more of the liquid.
Spoon into bowls and garnish with a bit of fresh parsley. Makes about 4 servings.
