Ingredients

    15 oz. black beans
    12 oz. corn, thawed
    1 red pepper chopped
    1 onion chopped
    1 cup snap peas chopped
    2 stalks celery diced
    .33 cup red wine vinegar
    .25 lemon, juiced
    1.5 tbsp. olive oil
    cilantro

Tips

Green pepper can be substituted for peas.


Directions

Combine veggies. Mix vinaigrette ingredients, including cilantro. Add to veggies. Chill.
