Introduction

Ingredients

2 sticks (240 g) Butter (unsalted)
1 cup brown sugar
2 medium eggs
1 1/2 cups of white flour
3 cups of rolled oats
1 tsp. baking soda
1 tbsp. cinnamon
1 tsp. nutmeg
1 cup of raisins (optional).
Tips
I make very, very small cookies these days, less than an inch in diameter. This allows me to have a couple when I bake them. I love baking, and my husband and stepkids love these, the smaller portions has both me and the kids eating less (my husband sees through the smaller size).
Directions
Whip the butter (room temperature), sugar and eggs together.
In another bowl, mix the flour, baking soda, cinnamon, nutmeg and oats. Then mix them into the butter, and add the raisins.
Turn the oven on to 350 F (180 C), and meanwhile, chill the cookie dough (this is important, if the cookies enter the oven at room temperature, they spread all over the sheet and meld into one huge flat cookie). I even put it in the freezer for better effect.
When the oven is ready, place medium sized (an inch and a half to two inches in diameter) or small (about an inch or less in diameter) balls, an inch apart. You don't need to put anything on the cookie tray, they will come off themselves.
They will be ready in 5 to 7 minutes.
Serving Size: Makes about 60 medium cookies, or 100 small ones (less calories)
