Introduction
I love this meal when we go to middle eastern restaurants but it always seems so oily. I wanted to make a version that focused on lots of fresh vegetables for bulk and wasn't oily. I think i retained the flavor of the original recipe but made this something you can do on a low fat or low calorie diet. Ingredients

Carrots- 1/4 cup sliced
Multi colored sweet peppers- 1/4 cup
Mushrooms- 1/2 cup
Olive oil- 1 tsp
Tomato sauce- 4 tbsp
Water- 1/2 cup
Paprika-1 tsp
Cayenne pepper- 1/2 tsp
Minced garlic- 1 tbsp
Parsley- 1 tsp
Chopped onion- 1 tsp
Salt- 1 tsp
Black pepper- 1/2 tsp

Directions
In a wok or large pot on medium heat, add olive oil and chopped onion, next add mushrooms and salt, stir and let cook for 5 minutes until mushrooms are wilted. Next add the carrots and peppers, stir and cook for another 5 minutes.. Next add garlic and stir, cook for 5 minutes. Stir in the tomato sauce and water, stir, then add cayenne pepper, paprika and black pepper, and let simmer for about 10 minutes.
Plate and serve.
This would go great with a 1/2 cup of brown rice as a side.
