Ingredients
-
1 Quart milk
1 Cup sugar
2 yeast pkg.
1 Cup shortening or Lard
1 ½ tsp salt
1 ½ tsp baking powder
12 Cups flour
2 beaten eggs
Tips
I've also done this recipe gluten free for celiac friends and it works great.
Can sub lard with crisco or deoderized coconut oil for a healthier fat source.
Lye can be purchased at a hardware store usually in the plumbing section, sometimes called caustic soda.
The lye or baking soda carmelizes the sugars on the outside of the dough making the classic shiny brown coating you see on pretzels.
Directions
Heat milk, add sugar and shortening till melted. Cool to Luke warm. Dissolve yeast in ¼ cup of warm water, with a sprinkle of sugar. Add milk mixture and yeast (when bubbling) to half of the flour. Stir till even, then add beaten egg, remaining flour with baking powder and salt. Knead well, let raise until double. Punch down and shape into pretzels. Let rise until light. Dip in solution of water and lye ( 2 tsp. per 8cups water, or substitute baking soda 8 tsp) Place on cookie sheet waxed with bees wax or baking spray. Salt with course salt, Bake at 500 until brown (about 5min)
