Introduction

Traditionally, aioli is a garlicky sauce made with olive oil and egg yolks--a fancy mayonnaise. Outside of French or Spanish cooking, the definition has loosened, and it has come to refer to any souped-up mayo. Our "aioli" contains no mayo, egg yolks, or oil; instead, its creaminess comes from Greek yogurt.

Ingredients

    1 sun-dried tomato* or 1 tablespoon chopped roasted red pepper
    1 tablespoon fat-free Greek yogurt
    1 tablespoon chopped chives
    1 tablespoon chopped basil
    1 teaspoon lemon juice

    * If using jarred sun-dried tomatoes, opt for those packed in water. You could also use 1 teaspoon sun-dried tomato paste.

Tips

Use this recipe as a template. Swap the herbs, add garlic, or use vinegar in place of the lemon juice.


Directions

Place the tomato in a small dish and cover with hot water. Steep for three minutes, then drain and chop.
Combine the chopped tomato with the remaining ingredients and refrigerate or use immediately.
