Introduction

A great, and filling, on-the-go breakfast cookie that can be made ahead and frozen. A great, and filling, on-the-go breakfast cookie that can be made ahead and frozen.

Ingredients

    3/4 c. canola oil
    1 c. brown sugar
    3 tbsp molasses
    2 eggs
    1/2 c. skim milk
    1 c. oat bran
    1/2 c. whole wheat flour
    3/4 c. white flour
    1/4 c. flax seeds
    3/4 tsp baking soda
    1/2 tsp salt
    1/2 tsp ground ginger
    1/2 tsp cinnamon
    1/4 tsp ground cloves
    2 c. oats
    1/2 c. raisins
    1/4 c. snipped, dried dates
    1/4 c. snipped, dried apricots

Directions

Combine wet ingredients in a large bowl. Add oat bran and stir until moistened. Set aside.
In a medium bowl, combine dry ingredients, except for fruit. Stir dry ingredients into wet ingredients. Fold in fruit.
Using a 1/4 c. measure (or a 1/3 c. measure for larger cookies), divide batter onto greased cookie sheets.
Bake in a 375 degree oven for 10-12 minutes, or until tops are firm.
