Ingredients

    *Purslane, 3 cup
    *Green Onion (1 Green Onion), 0.50 cup
    Red Ripe Tomatoes, 2 plum tomato
    Olive Oil, 2 tbsp
    White Rice, long grain, .5 cup
    Water, tap, 1 cup (8 fl oz)
    Salt, .25 tsp
    *Ground Black Pepper, .5 tsp
    Garlic, 2 cloves

Directions

Put the all the ingredients in a pot, cover it and cook on slow heat until rice is tender enough (about 30 minutes).Enjoy!

This recipe is very simple and very tasty. It can be served hot or you may chill it in the refrigator and serve cool. It's also very tasty this way.

    Incredible!
    Easy and purslane adds a nice color and nutrition to this side dish. Can make it an entree by adding soe firm, marinated tofu at the end. - 7/29/20
