Ingredients

    1 cup all-purpose flour
    3 tsp baking powder
    1/2 tsp baking soda
    1/8 tsp salt
    1 cup mashed bananas
    1/4 cup sugar
    1/4 cup applesauce
    1 egg
    1/2 tsp vanilla extract

Directions

Preheat oven to 350 degrees. Grease pan or line with muffin cups.

Mix together flour, baking soda, baking powder and salt. In another bowl beat together banana, sugar, egg and vanilla. Stir in applesauce. Stir the wet mixture into the flour until just combined. Pour evenly into muffin pan.

Bake for 15 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.

To keep flavor store in an airtight container or bag.

    These are good! I sprinkled some walnuts on the top, also used no sugar added applesauce. Will try again using egg beaters instead of egg (I was out today) & would also like to figure out how to change the flour to whole wheat. - 2/24/08

    i wanted them to taste more like bananas, but mine may not have been quite ripe enough. adding a little bit of nuts would help, i might reduce applesauce a little and add a little extra banana next time. - 4/18/08
