Introduction

Fast and easy to put together! Switch out ground turkey, chicken or beef. I had beef stock on hand, but use vege or chicken instead. Feel free to spice it up! Fast and easy to put together! Ingredients

    2 cups Instant Brown Rice
    1.75 cups chicken/beef/vege stock
    1 can Black Beans - drained and rinsed
    1 can Rotel - do NOT drain
    3 - 4 small chicken breasts, cooked, diced
    (or saute chicken in pan and remove before cooking rice)


Tips

Can add hot sauce, chili powder, cumin or other spices as desired. Make is as simple or spicy as you like!


Directions

Bring stock and Rotel to a boil in a skillet, add rice and beans.

Cook rice mixture according to package directions. Don't forget the lid! If using regular brown rice, cook longer - according to package.

When rice is done and "fluffing" for 5 minutes, add chicken to heat through.

Serving Size: approximately 6 - 1.25 cup servings
