Introduction

Threw this together one night from the veggies I had available and it's been a household favorite ever since. Threw this together one night from the veggies I had available and it's been a household favorite ever since.

Ingredients

    3 large tomatoes (cubed)
    2 Large English Cucumber (diced)
    1/2 large Red Onion (cubed)
    1/2 Kalmata Olives
    3 garlic cloves (minced)
    1 TBSP Olive Oil
    Juice from 1 fresh Lemon
    Salt

    1/4 crumbled Feta
    Fresh Cracked Pepper


Directions

Toss Tomato, Cucumber, Onion, Olives, Garlic, Oil, and Lemon Juice. Toss in Salt and to taste. Chill if desired. Top salad with Feta and Fresh cracked Pepper. Serve immediately.
