Ingredients

    3 leeks (or 2 very large ones) diced
    1800ml of no salt added chicken broth
    12oz potatoes (cubed)
    2 chicken breast (cut in half lengh wize)
    2 onions diced
    1/4 cup of butter
    salt and pepper to taste
    a touch of cayenne pepper (optional)

Tips

the chicken is an add on to make it heartier, you can remove and it won't affect anything


Directions

make sure to start by cleaning your leeks properly

then chop or cut ingredients as per the list

put your pot on the stove med high, melt the butter

then add the leeks and onions, stir and cook until transluscent about 5-10 min,

Add the potatoes and the broth, stir then put in your chicken,

put the temperature on max once it starts to boil stir and lower temp to medium low,

let simmer for 30 min, stir, then let simmer another 30 min

take out chicken, and put asside

blend the soup, cut chicken into bitesize pieces, put back in pot stir and enjoy
