Ingredients

    16-oz bag of coleslaw mix (shredded cabbage with carrot)
    2 stalks of green onion
    1 package of ramen noodles with oriental-flavored seasoning
    1/3 cup peanut oil
    3 Tbsp or 1/4 cup rice vinegar - UNseasoned
    1-2 tsp sugar
    1 tsp ground pepper

Tips

Optional mix-ins, not included in nutritional info:
grape halves, dried cranberries, slivered almonds, sesame seeds, sunflower seeds, broccoli slaw, or other vegetables cut small or shredded.


Directions

Set aside ramen seasoning packet. Chop green onion. Crush ramen noodles. Put noodles, coleslaw mix, and onion in a large bowl. In a measuring cup, measure and mix together peanut oil, rice vinegar, sugar, pepper, and ramen seasoning. Pour dressing over coleslaw and mix thoroughly. Serve immediately or refrigerate.

Serving Size: makes ten 3/4-cup servings, I think.
