Ingredients

    2 Chicken Leg Quarters (Leg and Thigh), skin removed
    1/2 C French Fried Onions, crushed
    3 Tb Ground Flaxseed
    1 Large Egg
    1/4 C skim milk
    Dash Salt
    Dash Pepper
    1 Tsp Tarragon
    1/2 Tsp Paprika
    1 Tsp Garlic Powder

Directions

1. Preheat Oven to 375. Skin Chicken, if chicken does not come pre-skinned
2. Place fried onions in a ziplock bag. With a rolling pin, crush into small pieces.
3. Set up dredging station. In first tray, place ground flaxseed. In the second, whip together milk and egg to create an egg wash. In the third, place crushed onions.
4. Dredge chicken through flax, then egg wash, then in the onions. Place in a casserole pan that has been sprayed with cooking spray.
5. Season with salt, pepper, tarragon, paprika, and garlic powder.
6. Back at 375 for 60 - 67 minutes, or until juices run clear. Let sit 5 minutes before serving.

    Before I make this, I have a question... I've never used flaxseed... does it have a flavor, taste? I know it's supposed to be healthy for me, but...I'm wondering if it changes the taste or texture of what I'm cooking? Thanks... - 7/6/12
