Introduction

Ingredients

    3 cups water
    1.5 cup uncooked quinoa
    3 tablespoons low sodium soy sauce
    2 garlic cloves, pressed
    1.5 cups frozen veggie mix
    4 eggs (beaten)

Tips

For more protein and lean fat, chicken is a great addition to this meal. Make sure you cook it before putting it in with the quinoa.

You can also put more soy sauce on it after cooking. I have found that cooking the quinoa soy sauce and garlic really gives this a great flavor!


Directions

1. Bring water to boil
2. Rinse quinoa well - very important! If you don't, you quinoa will taste bitter.
3. When water is boiling rapidly, put pressed garlic, soy sauce and quinoa in to water.
4. Cover and lower heat to medium-low. Let boil for 15-20 mins. Do not uncover or stir.
5. Beat eggs together.
6. Combine frozen veggies and eggs and cook over low heat for 5-10 mins until veggies are thawed and eggs are cooked.
7. Mix everything together and enjoy!
