Ingredients

1 bag (1 lb) frozen cauliflower
1/4 C Grated Parmesan (fresh)
1 1/2 C Shredded Cheddar
3 oz Cream Cheese
1/4 C Sour Cream
6 Slices bacon, cooked crisp
Season to taste

Tips
add'l salt is not needed if you salt your water as cauliflower boils as the cheeses are salty.
Directions
Pre-Heat oven to 350
Cook cauliflower in salted (if desired) water until tender but not overly soft. Drain.
Mash with potato masher.
Mix in cheeses and bacon, reserving 1/2 chedder for the top.
Spread in greased casserole dish (I used deep dish glass pie plate).
Sprinkle remaining cheddar on top.
Bake uncovered at 350 for 15 mins or until hot thru and cheese on top is melted.
