    1.5 lbs skinned and boned chicken breast
    8oz linquini
    1/2 cup cream style peanut butter
    /2 cup water
    3 T low sodium soy sauce
    3 T cider vinegar
    1T sugar
    1T vegetable oil
    4 cups coarsely shredded cabbage or 1 package (10oz) coleslaw mix


Place chicken in a large pan of water and bring to a boil. Reduce the heat to low and simmer uncovered until no longer pink inside, approx. 10 min. Meanwhile cook the pasta as directed.

Whisk peanut butter, water, soy sauce, vinegar, sugar and oil or mix in a blender or food processor until smooth and transfer to a large bowl. Drain chicken, let cool and shred. Drain pasta and add to peanut butter mixture. Add chicken to pasta, add cabbage, toss well and serve. Serves 6.
