Ingredients

    1 cup finely chopped onion
    1 garlic clove
    4 oz white mushroom sliced
    1 cup pearl barley
    2 cup veg stock
    2 cup water
    3 c finely chopped kale
    1 1/2 cup or 15 oz can of white beans
    1/4 cup milk
    1 tbsp soft margarine
    1 1/2 tsp dried savory
    black pepper, ground
    Mrs. Dash Table Blend Seasoning



Directions

Spray cooking spray in a large skillet, heat over med heat. Add onion, cover, and cook until tender, about 5 minutes. Add garlic and mushrooms and cook until tender, about 3 minutes.
Stir in the barley, 1 cup of water and 2 cups of the stock. Bring to a boil over high heat, then reduce the heat to low, cover, and cook, stirring occasionally, until the barley is tender and most of the stock is absorbed, about 45 minutes. About halfway through the cooking time, stir in the kale. If the stock is absorbed before the barley is tender, add 1 cup of water or as needed and cook until the barley is soft. Stir in the beans and simmer until heated through ,about 3 minutes.
When the barley is tender, remove from the heat and stir in the milk, margarine, and savory. Season with Mrs. Dash table blend seasoning and pepper to taste and serve at once.
