Ingredients

1 1/4 Cups Flour
1/2 Cup Soy Butter(I used Wowbutter)
1/2 Cup Soft Margarine
1/2 Cup granulated Sugar
1/2 Cup brown sugar (packed)
1 egg
1/4 Tsp salt
1/2 Tsp baking soda
1 Tsp baking powder
1 Tsp vanilla extract
Tips
Be saved in freezer, with plastic wrap, or already in balls in tupperware. I make these when finally after 5 years of not having had a peanut butter cookies, because my husband's severe nut allergy. They make a suitable alternative, for me and my kids!
Directions
Preheat oven to 300 degrees
Beat Sugars and Margarine until fluffy. Add egg and Soy butter, and vanilla, beat until smooth.
Mix dry ingredients together first, then add to wet mixture, until smooth and resembling cookie dough.
Grease cookie sheet, and roll dough into 1.5 inch balls, and flattened balls with fork. Bake at 300 degrees, for 17-20 minutes for chewy cookies.
Serving Size: makes 20-24 cookies
