Ingredients

    1 cup Wild Rice
    2 chicken Breasts roasted and diced
    2 cups red and green bell peppers
    3/4 cup celery, diced
    1/2 cup dried cherries
    1/4 cup parsley chopped
    1/2 cup pecans, toasted
    1/3 cup vinaigrette

Tips

Add chopped snap peas for additional crunch.


Directions

Cook wild rice. Cool. Roast chicken breasts. Cool and dice meat (1/2" dice). Mix in other ingredients. Chill, or serve at room temperature.
