Introduction

Ingredients

    1.5 Tbs. extra virgin olive oil
    1.5 Tbs. lemon juice
    1.5 Tbs. garlic powder

    2 medium tomatoes, thickly sliced
    1/2 large onion, thickly sliced
    1/2 large portabella mushroom, thickly sliced
    10 brussels sprouts, halved

Directions

Pre-heat grill to 400 degrees. Emulsify lemon juice, garlic powder and olive oil.

Brush lemon/oil mixture onto one side of each vegetable slice--starting with the onions, then the sprouts, then mushrooms, then tomatoes--and place on grill basted side down as you go. Once vegetables are on the grill, brush lemon/oil mixture on the side facing up. Once vegetables have been basted on both sides, flip in the same order they were placed on the grill. After 5-10 minutes, when the vegetables have grill lines, take them off the grill and serve.
