Directions
Gather all ingredients
Rinse Rice and Drain Well
Add Water to Rice and Cook on low-med heat until all liquid is absorbed (cooked into rice)
Add in Vanilla, Almond Milk and Sugar and stir while slowly bringing to a boil approximately 45minutes - 1 hour.
With a little water moisten cornstarch until its not clumpy (will look like white school glue) and add into pot to cook with the remaining 4-5 minutes on the stove top.
Remove from heat and add to baking dish or individual dishes placed onto cookie sheet to help protect any pudding that may run over the sides of the dish/dishes. You can refrigerate the pudding as it is at this stage as it will thicken upon cooling or you may bake it by placing it under the broiler in your oven (on BROIL) for about 20 minutes until golden brown-darker brown spots depending on your preference begin to appear. This skin is desired by many so do not burn it. This is the sugar forming a custard on top so can burn easily and no one likes the taste of burned sugar.
