Introduction

I first made this dish for a potluck when I realized I was a day away from payday and broke. I went to my cupboards to see what I had and make the best of things. I served it with pieces of lettuce to make lettuce wraps and it was the hit of the evening. Feel free to play with the amounts of seasonings to make it to your taste. Ingredients

    1 Can - Sweet Corn, drained
    1 Can - Diced Tomatoes with Jalapeno, drained
    1 Can - Black Beans, drained and rinsed
    1-2 tsp - Ground Cumin
    1-2 tsp - Mrs Dash Garlic and Herb
    1 tsp - Garlic Salt

    Lettuce or tortilla chips. All depends on how healthy or naughty you wish to be!

Directions

Drain the corn and tomatoes, drain and rinse the black beans. Place all items in a bowl and stir.
It is ready to serve immediately, but like many things, if it it is made ahead of time and has a chance to sit, it gets even better.
