Introduction
My Mom always made fried green tomatoes, fried in crisco and butter. I still love them and decided to try to fix them healthier. This recipe is what I came up with, which for me is a good replacement, of course not quite the same, but still has the fried green tomato flavor and similiar texture. Ingredients

4 Medium Green Tomatoes
1/2 cup white flour
1/2 cup low fat buttermilk
Spray butter or oil
Salt and pepper if desired
Directions
1. Preheat oven to 450 degrees
2. Spray cookie sheet with butter or oil
3. Put buttermilk and flour in seperate bowls
4. Cut tomatoes in 1/2" to 1" slices, I usually get 4 slices out of each medium tomato
5. Dip tomato slices in buttermilk, letting excess drip off
6. Coat both sides of tomatoes with flour, coat very lightly, if you get to much flour on it, it wont' get crisp, there will just be white flour on the tomato.
7. Lay slices on cookie sheet
8. Spray top of slices with butter or oil
9. Bake for 10 minutes on middle rack, then flip tomatos and spray tops again, and bake for an additional 10 minutes
10. Season as desired
