Introduction

Number of Servings: 6

Ingredients

    Near East Parmesan Couscous (as prepared),1 box
    water, 1 cup
    Scallions, raw, small bunch, chopped
    Chickpeas (garbanzo beans), 1 can, drained and rinsed
    *Tomatoes, red, ripe, raw, year round average, 5 plum tomato, chopped
    Olive Oil, 2 tbsp
    Parmesan Cheese, shredded, 1/2 cup
    salt, pepper, garlic powder to taste

Tips

Use a tupperware-type container to cook the cous cous in so you have a lid that seals tightly.
This is a GREAT potluck dish.


Directions

Boil water.
In a medium container mix cous cous and dry packet from box, stir in boiling water, seal tightly, set aside for 10 mins.
While cous cous is cooking:
Add rinsed beans, chopped scallions and tomatoes and s&p in large bowl.
When 10 mins is passed, cous cous is ready - fold it in to the bean mixture, mix in the cheese and olive oil.
Enjoy hot or cold.

Serving Size: recipe is for 6 equal servings, more if you increase the beans/vegggies
