Ingredients

2 lbs penne pasta (cooked)
3 tbs oil
3 tbs diced shallots
3-4 cloves garlic (finely chopped)
1 c dry sherry
1 c chicken (or seafood) stock)
1 c cream
28 oz crushed tomatoes
1-1 1/2 lbs steamed lobster
parsley and fresh grated parmesan cheese to garnish
Tips
This dish can be easily made with shrimp, chicken, or even sausage in place of the lobster.
Directions
In a large sauce pan cook pasta according to directions until al dente; drain
Heat oil in a large skillet over med heat. Add shallots and garlic, saute 5 minutes.
Deglaze pan with sherry, stir in stock and tomatoes. Bring to a boil.
Add seafood and cook until opaque. (do not over cook the seafood or it will take on a rubbery texture)
Stir in heavy cream; salt and pepper to taste; toss with pasta and garnish with chopped parsely and fresh parmesan.
Serving Size: 6-8 entree servings
