Introduction

This recipe is great if you're in a hurry. Layer everything into a solo cup and eat it on the way to work! This falls into my "carbalicious" category, but it does contain at least some fiber, fat and protein. On the glycemic load scale, it's still pretty good compared to a rice cake. I also consider it comfort food -- sweet, crunchy, medium fat, fruity AND you get to eat it with a spoon. This recipe is great if you're in a hurry. Ingredients

    1 cup plain yogurt (I recommend whole milk plain organic yogurt -- satisfying and tasty, with no added sugar)
    1/6 cup granola (make your own or use KIND Healthy Grains Oats and Honey Clusters, with amaranth, quinoa, oats, millet, and buckwheat)
    1 to 1.5 cups sliced fruit, berries (strawberries, blueberries and peaches are great, and plain frozen berries add a nice twist too!)
    Dusting of coconut flakes, unsweetened

Tips

Eat mindfully! This is like having dessert for breakfast. A good source of energy and phytonutrients. Gluten free, low sodium.


Directions

Layer in a parfait cup, bowl, or disposable cup for the road.
