Ingredients

    1 medium head of organic broccoli
    6 cloves of roasted garlic
    2 Cups of low sodium chicken stock
    1/4 Cup of organic half and half
    2 tablespoons of Kerrygold grass fed butter
    Salt to taste

Tips

Use pastured chicken stock from a freshly cooked pastured chicken. For a richer soup add more butter and use heavy cream instead of half and half. For a lighter soup, substitute lowfat milk for half and half. Pastured if available. For thicker soup cut down on liquid ingredients.


Directions

Cook broccoli until fork tender. Roast garlic. Heat chicken stock. Use a high speed blender or food processor to pure small amounts of broccoli with chicken stock. Continue adding broccoli and chicken stock until smooth. Add butter and half and half at the end. Reheat to serve.
