Introduction

Ingredients

    One small zucchini sliced(about 1.5 cups sliced)
    One small summer squash sliced(about 1.5 cups sliced)
    One half large yellow onion sliced
    2 shallots (1-2 TBSP minced) (optional)
    2 cloves of garlic minced
    2 TBSP EVOO
    Seasonings: red pepper flakes, salt, pepper, parsley flakes

Tips

* You can customize the seasoning to your liking, but don't skip the garlic. I PROMISE it's delicious! You can also use garlic powder instead of fresh garlic.

** Lemon juice squirted on the veggies while they cook for the last couple minutes is a nice addition too :)


Directions

Slice vegetables and add seasonings and olive oil; mix well. Allow to sit for a few hours, the grill or sautee. YUM!
