Ingredients

    4 small sweet potatoes
    1/4 cup mayo
    1T. mustard
    4 celery stalks, diced 1/4" thick
    1 red bell pepper diced
    1 Cup fresh diced pineapple
    2 scallions finely chopped
    salt and pepper to taste
    1/2 Cup toasted pecans, coarsely chopped
    Chopped fresh chives for decoration

Tips

This is even better when made a day ahead. Stir any accumulated liquid back in just before serving. Nutrition info is; 114 calories, 2g protein, 14g carbs, 2g fiber, 7g fat, 2mg cholesterol, 341mg sodium per serving


Directions

Bake potatoes in 400 degree oven for 1 hour. Cool. peel and chop into 1/2" pieces. Mix all ingredients except chives and pecans. cover and refrigerate at least one hour. Just before serving, fold in pecans and top with chives for a garnish.

Serving Size: makes 8 1-cup servings
