Ingredients

    3 Tbsp extra-virgin olive oil
    2 Tbsp chopped mixed herbs
    1 Tbsp fresh lemon juice
    ½ tsp salt or salt alternative
    4 tomatoes (approximately size of fist)
    2 cups (1-inch) cubed watermelon
    [or 1 cup red and 1 cup (1-inch) yellow water melon]
    ¼ cup finely sliced red onion
    ½ cup crumbled feta cheese

Directions

1. Whisk together first 4 ingredients (oil, herbs, lemon juice, and salt) in a large bowl.
2. Add tomato, watermelon, and onion; toss in dressing that was mixed, coat. Sprinkle with feta cheese; toss gently.
