Ingredients

1 tbsp veggie oil
1 onion, chopped
2 cloves garlic, sliced
6 carrots, peeled and sliced
1 lg potato, peeled and sliced
1 sm turnip, peeled and sliced
1 apple, peeled cored and chopped
5 1/4" inch thick slices of fresh peeled ginger
6 cups water
1 bouillon cube - veggie or chicken
1 tsp salt
Directions

Heat oil in lg saucepan over med. heat. Add onion and cook, stirring about 3 mins or until softened. Stir in garlic; cook about 30 seconds more. Add carrots, potato, turnip, apple, ginger, water, bouillon and salt. Bring to a boil, reduce heat and simmer about 20 minutes or until veggies are very tender. Puree in blender or food processor until smooth.
