Ingredients

Non-Stick Spray
3 Tbs Egg Substitute
1- 100 Calorie English Muffin
1 slice of turkey bacon
1 slice of 2% sandwich cheese
*Optional
Mason Jar Lid
Tips
** I will spray a mason jar lid with non-stick spray and place in my pan and then add the egg substitute. It keeps the egg from running everywhere and keeps its shape for the muffin.
This is a great recipe for a quick single serving breakfast. I often times will cook 6 Servings and freeze what I do not intend to eat. When frozen microwave for 1-1.5 minutes wrapped in paper towel.
Directions
1.Spray pan with non-stick spray
2.**Cook egg substitute being careful not to scramble (see Tips) on one side of the pan and your piece of bacon on the other side being careful that they do not touch. It will ruin the round form you are trying to maintain with your eggs. Cook eggs 2 min and bacon 4 min on each side.
3. Prepare your muffin ( microwave or toast)
4. Assemble and eat.
