Ingredients

    8 oz tempeh
    1.5 tsp olive oil
    1 serving ma po sauce
    small zucchini
    medium onion
    2 small to medium sweet potatoes
    tbsp soy sauce
    can lite coconut milk

    stir fry tempeh and veggies in the oil (i pre-cook the sweet potatoes in microwave for 2-3 min), then add soy sauce, mapo sauce and coconut milk and simmer until it thickens.
