Ingredients

    4 cups Bran Flakes
    2 cups Bran Buds
    2 cups Water (boiling)

    4 cups Buttermilk
    4 Lg. Eggs
    1 Stick Butter (melted)
    1tsp. Vanilla

    1/2 cup Applesauce (unsweetened)
    1 cup Stevia in the Raw
    1 cup Brown sugar (dark)

    5 cups Whole Wheat Flour
    4 tsp. Baking Soda
    1 tsp. Salt

Tips

You can substitute any sugar equal that you wish and you may use any equivalent type of Bran flake cereal and Bran buds or All-Bran that you wished. I choose to use Nature's Path Organic Heritage Flakes because it has the Quinoa flakes in it. I found that in the cereal isle at Walmart. I also found the Stevia in the Raw at Walmart as well. Directions

In XLarge mixing bowl pour Bran Flakes and Bran Buds. Boil 2cups water in microwave then pour over cereal. Mix until water is gone.
In separate bowl mix Buttermilk and Eggs while melting Butter in microwave, add melted Butter to the Buttermilk and Eggs then add Vanilla. Pour liquid over cereal and mix well.
Add Applesauce, Stevia and Brown sugar, mix well.
Add in your Flour, Baking soda and Salt. Mix altogether.
Using regular cupcake pans, spray with olive oil and fill about 2/3 full. Bake in oven at 350 degrees for 10-12min.
Store leftover mix in plastic container in the refrigerator for up to 2 weeks, just pull out and bake as few or as many as you want at a time! Enjoy! :)
