Ingredients

    Salad:
    Quinoa, 1 c dry (4 c cooked)
    1 can black beans
    1 avocado, chunked
    1 c tomato, chunked
    1 bell pepper, chunked
    1 teaspoon garlic, minced
    cilantro to taste

    Dressing:
    juice of 1/2 lemon
    1/2 tablespoon olive oil
    1/2 teaspoon cumin

Tips

This is a favorite summer recipe, and can be served cold. If a warm side dish is desired, skip cooling the quinoa and stir tomatoes & beans in to warm pot; combine with all other ingredients and serve immediately.


Directions

Prepare 1 cup dry quinoa to package instructions.
While it cooks, drain & rinse beans and chop produce.
When quinoa is cooked, let cool 10 minutes, then combine with all salad ingredients.
Whisk together oil, lemon juice, and cumin. Mix in to salad.
Serve and enjoy!

Serving Size: makes about 10 1-cup servings, or 20 half-cup servings
