Ingredients

    8 oz. pared and cubed kohlrabi
    8 oz. cubed cucumber (with peel)
    8 oz. cubed carrots

    1 cup Low Fat Hellman's Mayo
    1/4 cup Splenda
    1 Tbsp. red wine vinegar
    1 Tbsp. lemon juice
    1 tsp. celery seed
    1 tsp. poppy seed
    1/8 tsp. fresh ground black pepper

Tips

Kohlrabi are easier than cabbage to grow in the garden and don't need to be sprayed for bugs. There are many uses for them, raw or cooked. They also freeze well.


Directions

Peel and cube kohlrabi. Wash and cube cucumber and carrots. Measure 8 ounces of each. In small batches, run veggies in Ninja or other food processor. I used 10 quick pulses in my Ninja food prep jar. Put veggies in large bowl while making dressing in the same Ninja prep bowl. (No extra dishes to wash!) Combine all dressing ingredients and process until well blended, about 15 seconds. Pour dressing over veggies, mix well, cover and refrigerate or serve. Makes 8 one-half cup servings, only 58 calories each.
