Introduction
The serving size (and therefore number of servings) will depend on the size of your waffle maker.For the waffle maker I have, I use just under half a cup of mixture and it makes about 8 waffles. Each waffle cooks for 95 seconds in my waffle maker and I have that written on the top of the machine in permanent marker.

Ingredients

‣ 2 cups sourdough starter
‣ 4 tablespoons butter, coconut oil, or olive oil
‣ 1/2 teaspoon sea salt
‣ 2 eggs
‣ 2 tablespoons sweetener (honey, maple syrup, sucanat, etc.)
‣ 1 teaspoon pure vanilla or vanilla/almond combo
‣ 1 teaspoon baking soda
‣ 1 tablespoon water
‣ spices to add-in (optional) - I use a good dash of cinnamon
Tips
‣ Add cocoa powder to your batter for a chocolate waffle. Top with fresh raspberry sauce and whipped cream for a special treat!
‣ Add diced apples and cinnamon for a cinnamon apple waffle.
‣ Use molasses instead of honey, and add a dash of cinnamon, ginger, nutmeg, and cloves for a gingerbread style waffle.
‣ Try a savory waffle. Omit the sugar. Add cayenne, pepper, ground mustard, herbs (fresh or dried), spices
(your favorite), garlic (powder or fresh) and fillers of your choice. Grated cheese, chopped and sautéed (or
not) mushrooms and onions, olives, sundried tomatoes, bacon crumbles... The possibilities are endless and delicious. Imagine a savory waffle with soups, stews, creamy sautéed vegetables, or fried eggs. Waffles make a quick, easy, different, and delicious substitute for bread any time of the day!
Spicy Cheese Savory Waffle
Make the waffle batter as usual except omit the sweetener and use olive oil. Add your fillers before stirring in the baking soda and water. I added a bit more salt, fresh ground pepper, a shake of mustard, garlic, and cayenne powders, and grated cheese. Stir well. Now add the baking soda and water. Give the batter a few good stirs to incorporate. Cook waffles as usual. Enjoy!
Directions

In a mixing bowl, combine 2 eggs, 1/4 cup melted
butter (not too hot), 1/2 teaspoon sea salt, 2
tablespoons honey, 1 teaspoon vanilla (optional), and
a healthy dash of cinnamon (optional).
Stir until ingredients are nicely combined. Pour in two cups of sourdough starter. Stir well with whisk. Set aside.
In a little cup, combine 1 teaspoon baking soda and
1 tablespoon water. Pour this mixture on top of your
batter. Stir quickly to incorporate the baking soda
into the batter. Your batter will get pillowy looking.
Begin the waffle making fun following the instructions for your waffle maker! Place your finished waffles on a
plate and serve.
Store leftovers in the refrigerator or freezer. For best results, toast your leftovers. They may be toasted directly out of the freezer.
