A variation of what I make for lunch every day. The seeds can be varied (sunflower, pumpkin, etc.) as well as the beans (chickpea, kidney, black etc.). A variation of what I make for lunch every day. Ingredients

    1 cup mixed greens
    4-5 cherry tomatoes
    1/2 cup chopped cucumber
    1/2 cup sprouts
    1/3 cup pumpkin seeds
    3/4 cup beans/chickpeas
    1 tbsp olive oil or lemon juice
    salt and pepper to taste

Directions

Chop ingredients to desired size and serve cold.

Serving Size: Makes 1 delicious salad
